The A500 does have a GVP sidecar but the computer is for the most part running from the floppy drive with games and demo disks. I have never seen the A500 as a serious hard drive essential computer. If I were you I would keep the 500 as a games and demo disk machine and run in tandem with a 1200. There's also the ICD AdIDE for fitting an internal ide 2.5" or 3.5" drive in an A500. You could also get a scsi/ide version of the Expansion Systems controller and use the ide drive on that (non-dma though). autobooting capabilities for the Amiga 500 and 2000, Amiga bus pass-through for the Amiga 500 and 1000, and optional RAM that fits in the Amiga 500 Supra SCSI Interface and draws its power from the hard disk, protecting the fragile Amiga 500 power supply.

my personal view is that the ACA500 is the best hdd , cf & accelerator solution for the a500. 1.3 boots cf hard drives and you can set up a nice workbench in that. if you use the 3.1 rom on the ACA you can use classic workbench with 1.3 theme. you don't need to use the aca500 menu at all after initial setup. Time to add a Hard Drive to your Amiga 500.
